The problem with all this free information is that 99.9% of it is totally wrong.
Nobody gives away real Wasabi growing secrets.
Wasabi growing information is closely guarded by Wasabi farmers and kept secret.
Wasabi growing techniques and methods have been passed down from one family generation to the next generation by word of mouth and experience. Most long-term Wasabi growers are retiring or dying and there is no one to take over the existing farms, or they are converted to another crop. The handed down information between family members has not been done, and the information is lost forever.
These days no one wants to spend a 10,000 hour apprenticeship to learn the nuances of growing high quality Wasabi which can be used for many things from food products to killing cancer. They want the information and knowledge distilled down into a manual and a set of detailed instructions.
The problem with this is that academics (and others) who have never grown a commercial crop of Wasabi in their lives are now claiming to be experts in growing Wasabi commercially. They have read books and articles on the subject and think they have managed to short-circuit the learning process to the point where they have the distilled information to sell to others. This is, of course, absolute nonsense – reading a book without hands on experience does not make a Wasabi farmer, or anything else for that matter.
When you start collecting information on Wasabi you come across a lot of information which contradicts another source. How do you know what to believe? The problem here is that you don’t know what to believe and you end up with information overload and you start going round in circles. A lot of people want to experiment at this point to find out what method or piece of information is true. As soon as you do this you have moved from being a Wasabi grower to a Wasabi growing researcher, and our experience is that hardly anyone who goes down that path ever ends up becoming a commercial Wasabi grower. We did, but that was because there was no one around to show us how to grow Wasabi, so we had to figure it out ourselves or give up. 🙁
Every wasabi farm is different, and one size or solution does not fit all.
Every Wasabi growing situation is different to every other Wasabi farm, even those being grown just down the road. One method that works well on one piece of land and environment may not work as well in another area.
Each Wasabi farm must be set up to suit the property being used and the local environment and infrastructure.

Why you should work with the Wasabi Maestroes.
Let me tell you the story of how we became Wasabi Farmers.
It was back in the dark ages of 1990 when we (Michel and Jenny Van Mellaerts) had come back from the beach with our four boys and flicked on the TV. A program was showing entitled “Country Calendar” and in the last 5 minutes or so of the program that we saw was about an experimental crop called Wasabi that was being trialed by Crop and Food in the South Island of New Zealand. They also showed it being grown in the ground, and mentioned that it was being sold for $100 per kilogram. That piqued our interest as we had just purchased a 5 acre abandoned orchard and house just north of Auckland, and were looking for something to do with the land.
The next week we managed to track down some people in Crop and Food who were looking after the research into this experimental crop, Wasabi. The researchers were spending one day a month on this research and were not getting very far. They had a couple of experimental growing areas that we were invited to visit and view what they were doing. The important thing at that point was that Crop and Food had some plant stock they were willing to sell to us to play with. At this point in time we had absolutely no idea the depth of the rabbit hole we had stepped into. 🙂
Remember at this time, nobody had any real idea how to grow Wasabi in New Zealand apart from what they had managed to glean from various books and articles, and a lot of that was disinformation.
So we built a growing spot in the front garden where we could keep an eye on what was going on. This was based on what we had seen during our visits to the Crop and Food experimental plots. We got some plants and within 3 weeks they were all dead. So we added things and did some tweaks and tried again. Same result – dead plants, but these lasted 5 weeks.
Eventually due to trial and error we finally got plants to grow long enough to produce a usable rhizome (sometimes called a root or stem). A day for celebration!
By this time it was apparent that the front garden was not going to big enough if we actually wanted to make some money out of growing Wasabi, so we moved to the back orchard. Here we removed the vegetables from an old greenhouse we had been using to feed the hungry hordes in the house (4 little boys, remember), and set up a small hydroponics system to see if Wasabi could be grown by that method. We had read an article that said the Japanese were experimenting with this, so in true Kiwi spirit we decided to give it a go. Result same as first front garden attempt – dead plants. We carried on trying out things until we had a brain wave and decided to buy a piece of gear that we thought would make a significant difference. It was expensive and we needed a bank loan to get it. Anyway we did get it and it did make the difference we needed. No more dead plants – well at least not a complete wipe out.
Now we were off and running and we decided that Michel would apply his technical skills (he was a Consulting Design Engineer after all), and design a growing system from the ground up and build that in the old orchard. The expensive piece of equipment could be used there as well. We got the structure built after the builder decided he didn’t want to build it in the previously pegged positions and moved everything 10m away from where it was wanted without telling anyone. It was only after he had poured the foundations that anyone realised what he had done. Just an example of the “Wasabi two step”, the first of many I might add. 🙂
Anyway to cut a long story short the growing area was completed and 5000 plants were installed. Everything was turned on and it all worked just as expected. Less than a year later the first commercially available fresh wasabi rhizomes were sold in New Zealand.
During this time the two original researchers from Crop and Food were invited to come and have a look at the new growing system that was being used. They were kind enough to provide the letter below.
This letter was received from Crop and Food in New Zealand a number of years ago. This organisation is the only outside group that has ever inspected the Sawa Wasabi growing system and they found that this system was “at least 18 months ahead of any other growing facility in New Zealand”.
Since the time that this inspection occurred the Sawa Wasabi growing system has been improved significantly.
When it became known that this new Wasabi venture was in operation then it became a game of hide and seek with people climbing the fences to get into the growing system. At one stage a New Zealand Government department wanted to bring a coach load of Japanese Wasabi Growers to come and have a “look” at this new growing system. They were told to look elsewhere.
This is what one of our neighbours said when asked about us in 2009.
As an aside to this, Michel went to Japan to meet with the Director of one of the Wasabi Research Stations that was maintained by the Japanese Government. It was here that Michel was told that the Japanese had given up on trying to grow Wasabi hydroponically and had gone back to their traditional growing methods.

We have been growing Wasabi since 1990, and processing and marketing 100% Wasabi products since 1994 to the World. We even had the first commercial website in New Zealand in 1994, when most people regarded the Internet as a fad that wouldn’t last the distance.
Getting the right information and support
