Rabbit fillets with Wasabi

A quick meal using rabbit. This is a very under rated meat that we should eat more of. It is extremely lean and tasty. Perhaps more butchers and supermarkets should carry it.

Ingredients

4 fillets of rabbit
3 egg yolks
Juice of 1/2 lemon
60 g butter
2 Tbsp Namida® Wasabi Paste made from Namida® 100% Pure Wasabi Powder
Salt
Pepper

Method

  1. In a small saucepan, heat the lemon juice, then add the egg yolks while whisking vigorously quickly.
  2. Then add 50 g of fresh butter in small cubes gradually into the mixture.
  3. When the sauce is creamy, allow to cool slightly.
  4. Add Namida® Wasabi Paste, salt and pepper.
  5. Stir gently to mix all the sauce ingredients.
  6. Keep the sauce warm (in a small water bath for example).
  7. Cut each rabbit fillet into 2 equal lengths
  8. Fry in the remaining 10gm of butter until browned.
  9. Serve the rabbit fillets with a little sauce on Japanese noodles.
