Smoked Mackerel Sandwich

Smoked mackerel is a meaty, flavorful fish rich in Omega-3 fatty acids, but any smoked fish tastes as good.

Ingredients

2 slices bread (rye is great)
1 smoked-mackerel fillet (you could use another oily fish such as sardines or salmon)
1 Tbsp Wasabi Mayonnaise
1 rib of celery, finely sliced
A handful of baby spinach
A squeeze of lemon juice
salt and pepper

Method

  1. Spread the Wasabi Mayonnaise on both slices of bread.
  2. Flake the smoked mackerel, discarding the skin and lay it along one slice of bread.
  3. Place the celery on top, then the spinach, a good sprinkling of salt and freshly ground black pepper and, if you like, a squeeze of lemon juice.
  4. Put the other slice of bread on top, and itโ€™s ready to eat.

This is just as good as an open topped sandwich, without the extra carbs. ๐Ÿ™‚
