Cucumber Mint Tea Sandwiches

This is a vegan snack and makes 8 small sandwich bites.

Ingredients

4 slices of fresh spelt bread
1/2 cucumber, thinly sliced (peeling optional)
3 Tbsp Wasabi Maple Spread
black pepper grinder
fresh mint leaves (small leaves – or chop larger ones)
fresh dill (optional)

Method

  1. Slice the cucumbers.
  2. Pinch or chop your fresh mint leaves.
  3. Slice your bread and add the Wasabi Maple Spread.
  4. Add the cucumber and mint.
  5. Close sandwiches and slice into tiny bite sizes.
  6. Serve!

To celebrate the Irish connection (spelt bread) add Irish Tea or Irish Coffee.
