Cucumber Mint Tea Sandwiches
This is a vegan snack and makes 8 small sandwich bites.
Ingredients
4 slices of fresh spelt bread
1/2 cucumber, thinly sliced (peeling optional)
3 Tbsp Wasabi Maple Spread
black pepper grinder
fresh mint leaves (small leaves – or chop larger ones)
fresh dill (optional)
Method
- Slice the cucumbers.
- Pinch or chop your fresh mint leaves.
- Slice your bread and add the Wasabi Maple Spread.
- Add the cucumber and mint.
- Close sandwiches and slice into tiny bite sizes.
- Serve!
To celebrate the Irish connection (spelt bread) add Irish Tea or Irish Coffee.
