Marinated Sea Bass

Ingredients

2.2 Kg (5 lbs) sea bass or black cod (preferably a single fish)
2 cups white miso paste
2 cups red miso paste
2 cups granulated sugar
2 cups mirin

Method

  1. Place all ingredients except fish in mixing bowl and mix until miso and sugar are smooth.
  2. Pour miso marinade over fish and let sit in refrigerator overnight or one whole day.
  3. Place fish in baking pan; bake at 230 deg C (450 deg F) oven for eight to 10 minutes.
  4. Serve with Namida® Wasabi Mayonnaise on the side.

This serves 10 – 15 people. Just reduce quantities in proportion for less people. We normally cook this dish when we are having a buffet or BBQ for lots of people.
