1 small garlic clove, crushed
1/2 tsp cumin seed, toasted
1/2 tsp paprika
Pinch of cayenne pepper
50 ml (2 fl oz) olive oil
1 Tbs balsamic vinegar
2 Tbs boiling water
1) Place crushed garlic and spices in a grinder.
2) Blend to form a smooth paste.
3) Put in a bowl, and very gradually whisk in the oil.
4) Then whisk in the vinegar.
5) Finally whisk in the water to form a thin pouring sauce.
6) Cover and set aside.
