Turkey With Wasabi Cranberry Slaw

Cranberries are an essential addition to any turkey meal. In this recipe we use them with wasabi to make a delicious sandwich.

Ingredients

1 cup shredded turkey
½ cup shredded red or white cabbage
¼ cup shredded carrot
A few pecans, finely chopped
1 Tbsp finely chopped cilantro
2 Tbsp buttermilk
4 Tbsp Wasabi Mayonnaise
2 Tbsp dried cranberries
2 slices bread
1/2 Handful Arugula (Rocket)
1/2 Handful Spinach

Method

  1. Mix together all the ingredients down to the cranberries, excluding the turkey.
  2. Put the turkey on the bread, then spoon the mixture onto your bread and top with spinach and arugula.

This is a great way to use up the turkey after your celebration. 🙂
