Turkey With Wasabi Cranberry Slaw
Cranberries are an essential addition to any turkey meal. In this recipe we use them with wasabi to make a delicious sandwich.
1 cup shredded turkey
½ cup shredded red or white cabbage
¼ cup shredded carrot
A few pecans, finely chopped
1 Tbsp finely chopped cilantro
2 Tbsp buttermilk
4 Tbsp Wasabi Mayonnaise
2 Tbsp dried cranberries
2 slices bread
1/2 Handful Arugula (Rocket)
1/2 Handful Spinach
- Mix together all the ingredients down to the cranberries, excluding the turkey.
- Put the turkey on the bread, then spoon the mixture onto your bread and top with spinach and arugula.
This is a great way to use up the turkey after your celebration. 🙂
