The recipe calls for fresh tuna, but I have found that it works just as well with canned tuna in brine or spring water. The one in oil tends to be a bit greasy once cooked.
Cranberries are an essential addition to any turkey meal. In this recipe we use them with wasabi to make a delicious sandwich.
This is a lovely meal with the pepperness of the rocket counterpointing nicely with the endive and the wasabi enhanced flavours of the tuna and the dressing.
